The process begins with the dissolution of gelatin powder in water, typically at temperatures between 80°C and 90°C. High-shear mixers are utilized to prevent clumping. Once hydrated, the gelatin is mixed with sugar syrup, glucose, and other ingredients in a jacketed cooking vessel. Modern systems utilize vacuum cooking to lower the boiling point of the sugar solution, preserving the gelatin's gelling properties and reducing energy consumption.
Before the syrup reaches the depositor, precise amounts of flavors, colors, acids (such as citric acid to trigger gelation and add tartness), and active ingredients (vitamins, CBD, etc.) must be added. In-line dynamic or static mixers are used to ensure homogeneous distribution without introducing air bubbles into the mixture, which would ruin the clarity of the finished gummy bears.
