How Modern Lollipop Production Lines Work

1. Sugar Cooking & Preparation: The process begins with dissolving sugar and glucose in water. The mixture is heated in a vacuum cooker to remove excess moisture. Vacuum cooking is critical because it prevents the caramelization of sugar, keeping the candy base clear and bright.
2. Mixing and Tempering: Once the cooked mass reaches the correct temperature, natural or artificial colors, flavors, and food acids (such as citric acid) are added. The mass is then cooled on a tempering table to achieve a highly malleable, plastic state.
3. Batch Rolling & Rope Sizing: The tempered candy mass is loaded into a batch roller, which keeps the mass warm and shapes it into a cone. The cone is drawn through a series of sizing rollers (rope sizer) to form a uniform candy rope of the exact diameter required for the lollipop head.
4. Lollipop Forming and Stick Insertion: The candy rope enters the lollipop forming machine. Precision dies press the rope into the desired shape (spherical, flat, or custom 3D shapes). Simultaneously, the machine automatically inserts the plastic or paper stick into the center of the formed candy head.
5. Cooling & Wrapping: The freshly formed lollipops are discharged onto a cooling conveyor or cooling tunnel. Cooling is essential to harden the candy and prevent deformation.
